Kyle St. Claire with One90 Smoked Meats stops by Good Day to make Thanksgiving squash casserole. One90 Smoked Meats offers holiday favorites to go including brisket, beef tenderloin, prime rib, turkey and prepacked cheeses.
Squash Casserole
2 lbs Sweet Onions
4 lbs Yellow Squash
1/2 lb of Pasteurized American Cheese Sliced 1/4″ Thick
1/2 lb Smoked Cheddar Cheese, Grated
1 Sleeve of Ritz Crackers
1 1/2 stick of Butter
Salt and Pepper
Garlic Powder
Dill
Bring stock pot to a boil. Slice Yellow Squash into 1/2″ thick rounds. Slice Onion into 1/2″ thick half rings.
Boil Squash and Onion until tender, but still a little firm (additional Baking step will finish the veggies). In a large colander, drain the Squash and Onion thoroughly. (Allow 30 min. to drain, agitating every 5 min.)
Pour the Squash and Onion into a casserole dish, and season with salt, pepper, and dill. Layer the Squash and Onion with thin pats of butter. Layer the top of the Squash and Onion with the American Cheese sliced 1/4″ thick. Sprinkle the American Cheese with the Garlic Powder (to taste). Spread the grated Smoked Cheddar Cheese over the casserole.
Set Casserole aside (you can refrigerate overnight if you are prepping for the next day). Once you are ready to prepare the casserole for service, pre-heat oven to 350 F.
Melt leftover butter (3/4 – 1 stick) in a skillet on medium heat. Crush Ritz Crackers into 1/4 – 1/2″ pcs. Toast cracker pcs in melted butter until the butters is soaked and the crackers start to darken. Spread the toasted crackers over the casserole.
Bake until the casserole is warm, and the cheese layers have melted.
